After harvesting and a careful selection, the best durum wheat for pasta production is sent to the milling stage at the end of which the wheat is transformed into semolina.
The durum wheat produced for Terra Antica pasta is entrusted for this stage to Molino Bruscella of Genzano di Lucania, a specialized company in the production of high quality flours.
Production and packaging
After the transformation of durum wheat into semolina, we move on to the pasta production stage and finally to packaging. For this stage, the semolina is entrusted to Antico Pastificio Lucano Srl of Acerenza, which produces the pasta using artisanal processing with bronze drawing and slow drying at low temperature, followed by final packaging under the Terra Antica brand whose formats at the moment are: Calamarata, Paccheri, Penne rigate, Square Spaghetti and Ditali.
